CHOC PUDDING N-ICE CREAM

Ok, so last night I was compaining on good old Facebook about how I wanted some chocolate ice-cream.... Like, NOW! I wanted it sitting in front of me and spoon in hand, but I didn't want to actually physically make it... No, I wanted someone to make it for me so it tasted that little bit more special (You know what I mean? It just tastes better when someone else makes it!). Plus, what's the point of indulging if you have to put in an effort to do it?! Blah! Not interested.

Still not interested... Well, on second thoughts.... It was just before bed, and I was still thinking about ice cream (ARRRRRRRGH! SERIOUSLY DOING MY HEAD IN! A CRAVING GONE WILD!) So before I switched the lights off for the night, I decided I'd make it easy for myself to whip up some sweet, creamy goodness for the next night. I put an avocado, banana and a full ice tray in the freezer, plus a can of coconut milk in the fridge... SET! Ice cream, here I come. Tomorrow I'll be sitting in front of the TV, horror movie in sight, and icecream ready to go! YAY ME!

PS: I've said it before.... I don't like to share. So if anyone in the family suddenly decides that the masterpeice I created (and am now eating) looks good, and they want some, they only get a 'taste' and that's it. I'll make a double batch next time.... Heeheehee (Evil tummy of mine).

So let's get to it! I won't leave you in suspense any longer. When cravings awaken, well... We shouldn't mess with that. ;)



CHOC PUDDING N-ICE CREAM

Makes: 2 generous serves
The Night Before: 5 minutes of prep, but will need to be left in the freezer over night.
Preparation Time to Serve: 5 minutes
Fat & Calories: Who cares when you’re eating fantastically healthy… Come on!


Ingredients:

1 frozen Banana
1 frozen Avocado
1 can of Coconut Milk from the fridge
1 tray of Ice Cubes
3 heaped tablespoons of organic Cacao Powder
1 heaped tablespoon of organic Maca Powder
Generous sprinkling of ground vanilla pods
1/2 tablespoon of organic Stevia
Water if blender needs some help getting things moving.


Optional Flavour Combinations:

1 drop of Cinnamon Essential Oil
OR, 4 drops of Peppermint Essential Oil
OR, 3 drops of Wild Orange Essential Oil


Note: More or less Stevia can be added to alter sweetness to taste.


Method:

Day before - Freeze a peeled Banana and Avocado. Fill an ice cube tray and freeze. Refrigerate a can of pure coconut milk.

On the day of serving - 
  1. Add all ingredients to the blender in the order they are listed above.
  2. Continue to blend until a smooth and creamy consistency is achieved.
  3. Portion between two large ramekins.
  4. Line up your favourite movie and ENJOY!

ESSENTIAL LEMON VANILLA CAKE

A CUP OF TEA WITH THAT? 

Do you enjoy the fresh taste of crisp Lemon.... Lost and found again in a cloud of sweet indulgence?

Does a golden cake of citrus and vanilla notes, accompanied with a nice cup of tea in the afternoon sound like your perfect mini escape?

With 15 minutes preparation time and 40 minutes baking time, you'll be sitting down to a freshly made, warm treat ( and guilt free too, of course!) within the hour - and I'll excuse you for eating more than your fair share!




Who says 'you can't have your cake and eat it too'? With these ingredients, you'll eat what you want, and thank you very much! Let's take a look at the star ingredients:

Almonds: Extremely high in Vitamin E - a powerful antioxidant that protects our cells from damage and helps to maintain a healthy heart and healthy blood vessels. Almonds are a great source of manganese, biotin, and copper. Almonds also provide a source of magnesium, vitamin B-2 and phosphorous.

Lemon: One raw lemon (without the peel) provides 51% of daily vitamin C needs as well as small amounts of thiamin, riboflavin, vitamin B-6, pantothenic acid, calcium, iron, magnesium, phosphorus, potassium, copper and manganese.

Coconut Flour, Milk & Oil : The healthy fat that stops sugar cravings, boosts metabolism, supports immunity and aids digestion.

Stevia: 100% natural and helps to maintain normal blood sugar levels.


Vanilla: The extract contains small amounts of B-complex groups of vitamins such as niacin, pantothenic acid, thiamin, riboflavin and vitamin B-6. This condiment spice also contains small traces of minerals such as calcium, magnesium, potassium, manganese, iron and zinc.

Peruvian Pink Salt: Contains vital, naturally occuring, chelated minerals including calcium, iron, potassium, magnesium, copper and zinc.


I have offered my homemade 'Essential Lemon Vanilla Cake' to many different groups of lovely people, and the responses are always completely full of gratitude & appreciation! So take it from me, I have had a long history of success with this recipe! And it's super easy! AND... If you know me, you know that I like to cook 'ONE BOWL WONDERS'.... Taste and Practicality are my specialities!


ESSENTIAL LEMON VANILLA CAKE

Makes: 1 loaf shaped ( 10cm x 20cm x 5cm deep ) cake
Preparation Time: 15 minutes
Baking Time: 35-40 minutes
Fat & Calories: Who cares when you’re eating fantastically healthy… Come on!


Ingredients:

4 organic free-range eggs
1 270g can of pure coconut milk
1/4 teaspoon of ground vanilla bean
1 heaped tablespoon of organic honey (can use raw, however baking will destroy the active properties in any case)
1 teaspoon of organic stevia
1/4 teaspoon of Peruvian pink salt
The juice of 1/2 a lemon
The zest of one lemon
10 drops of Lemon Essential Oil
1 cup of Almond Flour
1 cup of Coconut Flour
2 heaped teaspoons if Baking Powder
Coconut Oil for greasing the cake tin


Method:

  1. Preheat the oven to 180 degrees Celsius and grease the cake tin with coconut oil.
  2. In a medium sized bowl, whisk together the eggs, coconut milk, vanilla, honey, stevia, salt, lemon juice, lemon zest and lemon essential oil.
  3. Add the almond flour, coconut flour and baking power and whisk in with the rest of the ingredients.
  4. Scoop the mixture into the cake tin and lightly spread the mixture evenly across the length of the tin.
  5. Bake for 20 minutes or until the top becomes a nice golden brown. Remove and cover with a layer of foil.
  6. Put back into the oven for another 15 minutes and check that the cake is cooked through, with a skewer.

LEMON CHEESECAKE BLISS BALLS





WARNING: ADDICTIVE! 

If you love the taste of tangy lemon in sweet treats, then these bliss balls are most definitely for you!

With a smooth cheesecake-like consistency, a delicious syrupiness on the tongue, and a zesty lemon accent to finish the sensation, what more could you want to satisfy an indulgent craving? ANY indulgent craving?

Take a look at the ingredients, there are only five and they are wonderfully nourishing.

Cashews: Packed with protein, iron, magnesium, phosphorus, zinc, copper and manganese. With a high copper content, the consumption of cashews helps the body utilize iron and eliminate free radicals, develop bone and connective tissue, and produce skin and hair pigment melanin.

Almonds: Extremely high in Vitamin E - a powerful antioxidant that protects our cells from damage and helps to maintain a healthy heart and healthy blood vessels. Almonds are a great source of manganese, biotin, and copper. Almonds also provide a source of magnesium, vitamin B-2 and phosphorous.

Dates: Iron for your blood, fibre for roughage, vitamin A for your eyes, potassium for your heart, B-vitamins, and tannins... Dates are one of the healthiest foods in the world!

I was pleasantly surprised (shocked) as to how good these tasted! Made from scratch from my own head… I have to admit, I was really proud of these special little treats. And now I am proud to share these with you!



LEMON CHEESECAKE BLISS BALLS

Makes: 6-7 heaped tablespoon-sized bliss balls
Soaking Time: 4 hours at least
Setting Time: 1 hour
Preparation Time: 15 minutes
Fat & Calories: Who cares when you’re eating healthy… Come on!


Ingredients:

1 cup of cashews soaked
5 dates
1 lemon
1 heaped tablespoon of organic coconut oil*
½ cup of raw almonds


Method:

1.     Soak the cashews in filtered water for at least 4 hours.
2.     Meanwhile, place the almonds into a processor and pulse until a rough crumb is achieved. Transfer the almond crumb into a wide based container. This is for coating the bliss balls later on.
3.     After soaking, drain the cashews.
4.     In a processor, combine the cashews, dates, the zest and juice of one lemon, and the coconut oil. Process for 5 minutes, or until a smooth cheesecake-like consistency has been achieved.

5.     Scoop the mixture into a bowl and place in the refridgerator for an hour (at least) to set.
6.     Roll a heaped tablespoons worth of mixture into  a ball.
7.     Roll the ball in the almond crumb until the surface is completely coated.
8.     Place balls in the freezer until ready to serve.
9.     Keep your lemon cheesecake bliss balls stored in the freezer.

GOJI AND BLUEBERRY CHIA PUDDING


I originally made these gorgeous specimens for my own enjoyment (indulgence), however I was so impressed with the taste and presentation, that I will most definitely be parading a tray or two in front of the extended family the next time they are over to visit. Breakfast will be the highlight, and what better way for everyone to start the day!

The antioxidants of Blueberries and Goji Berries, the nutritional portfolio of Chia Seeds, all that healthy Coconut fat, the active enzymes of Raw Honey, and the blood sugar regulation and metabolism boosting power of Cinnamon… It’s a complete breakfast in a cup! 

Be brave! A pudding like this should not be restricted to mornings... Sneak it in at any time! ;)


GOJI AND BLUEBERRY CHIA PUDDING

Dairy Free, Gluten Free, Refined Sugar Free, Nut Free.

Serves: 2
Total Preparation Time: 15 minutes
Setting Time: 5 hours
Fat & Calories: Who cares when you’re eating fantastically healthy! Come on!





Ingredients:


1 ½ cups of coconut milk
¼ cup of organic chia seeds*
2 heaped teaspoons of raw honey
½ teaspoon of organic ground cinnamon*
1 cup of fresh or frozen blueberries (fresh works better, however I used frozen this time)
2 cups of goji berries
Extra goji berries and blueberries to decorate at the end


Method:

1.     In a small bowl, mix together all ingredients EXCEPT the goji berries. While mixing, try to ‘smash’ the blueberries to release those wonderful colours and flavours.
2.     Set in the fridge for at least 5 hours, or overnight.
3.     Just before serving: When the pudding has set, put half a cup of goji berries into the bottom of each short tumbler (you'll need two short glass tumblers).
4.     Dollop a layer of chia pudding on top of the berries (leave enough room to add another goji layer and the last chia pudding layer),
5.     Add another layer of half a cup of goji berries to each glass.
6.     Finish with another dollop of chia pudding for the last layer.
7.     Top with extra goji berries and fresh (or frozen) blueberries.
8.     Enjoy!


Optional Topping:


Place on top of the undressed goji and blueberry pudding: 

  1. A dollop of whipped coconut cream.
  2. Over the coconut cream sprinkle some cinnamon. 
  3. Follow with extra goji and blueberries. 
  4. Finish with a drizzle of raw honey… Delish!

Note:


Always keep refrigerated.
Add the goji berry layers and fancy topping just before serving. This will prevent the goji berries soaking up the moisture from the pudding.
